I'll make a list, but I'll have to give it more thought. But there are four names that will make my list without hesitation (not necessarily in this order): Emma Thompson ("Wit"), Daniel Day-Lewis ("There Will Be Blood"), Charlize Theron ("Monster"), and Do-Yeon Jeon ("Secret Sunshine").
"A movie is not good because it arrives at conclusions you share, or bad because it does not. A movie is not about what it is about. It is about how it is about it: about the way it considers its subject matter, and about how its real subject may be quite different from the one it seems to provide." - Roger Ebert, from the introduction to "Awake in the Dark" (2006)
Yes this is a difficult question. I have to think about it as well.
But for starters I'll mention Casey Affleck in The Assassination of Jesse James By the Coward Robert Ford, a title almost as long as the movie. But, he's right at or near the top for me.

Nice to see your mention of Jackie Earle Haley, Penelope Cruz and Sean Astin.
Helen Mirren makes my tops list too.
So that's Casey Affleck and Helen Mirren so far. I'm also going to cite Mickey Rourke. I loved most of the cast in Hellboy2, esp Luke Goss and Ron Perlman which, certainly qualifies as unconventional choices.

OMG and the next is Paris Hilton for House of Wax? Catherine Keener always boring.
Even if you find Catherine Keener boring, there's a difference between that and not being able to act at all. Comparing her to Paris Hilton is really unfair.

I wholehearted agree with your love for the performances from Adaptation. It was a splendid movie from beginning to end.
In addition to those three as well as Day-Lewis\TWBB, I'll add:
Renee Zellweger, Nurse Betty Ellen Burstyn, Requiem for a Dream Ian McKellan, The Lord of the Rings Trilogy Amy Ryan, Gone Baby Gone Heath Ledger, The Dark Knight Sissy Spacek, In the Bedroom
